Chorizo & Mozzarella Gnocchi Bake
An incredibly cheesy tomato pasta bake, merged with gnocchi, chorizo and a generous portion of mozzarella for a comforting bake that is perfect for any day of the week

Instructions
Heat your oil in the medium pan over a medium heat until hot.
Fry the onion and garlic together for approximately eight to ten minutes until soft.
Throw in the chorizo and continue to fry for a further five minutes.
Pour in the tomatoes and sugar then season to preference. Bring to a simmer.
Once simmering, add in the gnocchi and cook for approximately eight minutes whilst stirring often, until soft.
Heat your grill to high.
Stir in around ¾ of your mozzarella and the majority of your basil into the gnocchi.
Tip everything into your baking dish (or six ramekins if you wish). Top with the remaining mozzarella.
Grill for three minutes to achieve a melted and golden texture to the cheese.
Season to taste, and scatter over the remaining basil.
Serve with your choice of green salad as a side.
