Chorizo & Mozzarella Gnocchi Bake
An incredibly cheesy tomato pasta bake, merged with gnocchi, chorizo and a generous portion of mozzarella for a comforting bake that is perfect for any day of the week

Ingredients
- 1 tbsp olive oil
- 1 onion finely chopped
- 2 cloves garlic crushed
- 120 g chorizo diced
- 800 g chopped tomatoes canned is fine
- 1 tsp caster sugar
- 600 g fresh gnocchi
- 125 g mozzarella ball cut into chunks
- 1 small bunch basil torn
Green Salad (To Serve)
- green salad of your choice
Instructions
- Heat your oil in the medium pan over a medium heat until hot.
- Fry the onion and garlic together for approximately eight to ten minutes until soft.
- Throw in the chorizo and continue to fry for a further five minutes.
- Pour in the tomatoes and sugar then season to preference. Bring to a simmer.
- Once simmering, add in the gnocchi and cook for approximately eight minutes whilst stirring often, until soft.
- Heat your grill to high.
- Stir in around ¾ of your mozzarella and the majority of your basil into the gnocchi.
- Tip everything into your baking dish (or six ramekins if you wish). Top with the remaining mozzarella.
- Grill for three minutes to achieve a melted and golden texture to the cheese.
- Season to taste, and scatter over the remaining basil.
- Serve with your choice of green salad as a side.
